We grew up eating this dish with our families, and now we're bringing it to yours. Dinich Wot is a comforting Ethiopian stew made with potatoes, onions, garlic, and berbere - the bold, spicy blend that brings it all to life. It’s simple, nourishing, and full of flavor.

How We Make Dinich Wot
Step 1: Toast the Spices
Start with a dry pan. Warm it up and add a bit of oil, then toss in your onions and let them cook down slowly. This is where the magic starts - the smell alone will make your kitchen feel like home.
Step 2: Add Garlic & Ginger
Once your onions are soft, add in freshly chopped garlic and grated ginger. These two are small but mighty. they give the stew its depth and warmth.
Step 3: Time for Berbere
Now it’s time for the heart of the dish ( berbere!). It’s spicy, earthy, and layered with flavor. Stir it in and let it bloom in the oil and onions.
Step 4: Potatoes Join the Party
Add peeled and chopped potatoes. Let them soak up all that spice, then add a splash of water or broth so it can simmer into a thick, flavorful stew.
Step 5: Tomato Sauce for Balance
A spoonful of tomato paste or sauce brings balance, it softens the heat and adds a gentle sweetness that ties everything together.
Step 6: Simmer & Stir
Cover the pot and let it simmer on low heat until the potatoes are soft and the sauce has thickened. Stir it once in a while to keep it all cozy.
Step 7: Serve it Up
We eat Dinich Wot with injera (Ethiopian sour flatbread), but you can also use rice, pita, or even eat it on its own. Add some chopped cilantro on top if you want a little green.
